Don Pancho hits all the right notes much like our beloved Don Guayo from Guatemala making fans from aficionados and everyday drinkers alike. Two separate lots combine to make one delicious coffee of body, structure and balance whose sum is greater than its parts. The higher plot with its rich loam produces a delicate frame of floral spice and bright orange fruit while the lower lot of clay provides denser, richer and creamier flavors. This a true crowd pleaser and for good reason.
Francisco Hilari represents our longest running relationship in Bolivia beginning when we first discovered the coffees of Siete Estrellas, and he stands apart as our most consistent Bolivian producer in terms of both quality and production. Francisco has deservedly earned the respect and affection of his peers who call him “Don Pancho” the nickname for Francisco, much like “San Pancho” is for Saint Frank. Until recently we offered this coffee as Siete Estrellas but with our expansion toward promoting neighboring producers there knew that we needed to honor Don Pancho in Bolivia whose coffee is impossible not to love and invites us all to believe in the future of Siete Estrellas.
